There’s a firm, chalky edge to this minerally Champagne, and mouthwatering flavors of candied lemon peel, green apple, crystallized honey and biscuit. This has an elegant texture and an overall sense of style. Drink now through 2020.

Ayala, owned by Bollinger Champagne sine 2005 but operated independently, offers excellent value with this Brut NV, sourcing grapes almost entirely from grands cru even though it’s their most widely available bottling. Its overall quality can be attributed to the fact that chef de cave Nicolas Klym focused on the outstanding 2008 vintage for 80 percent of the blend. The remaining 20 percent is composed of reserve wine from the 2007 vintage.

Dry and creamy in texture, this well-cut Champagne offers flavors of ripe yellow apple, white raspberry, anise, pastry and lemon curd. Completed by a stony, mineral-tinged finish. Disgorged April 2011. Drink now through 2017.

Luscious ripeness lends this wine a quince-like flavor, feeling round and generous against the chalky briskness of Champagne. For all its fruitiness, this is dry, firm and grounded, a clean aperitif or a first-course wine for a rabbit terrine.

Bright yellow-gold. A perfumed, mineral-accented bouquet evokes lemon, jasmine and chalk. Racy and dry, with strong citrus zest and pear flavors and a hint of bitter quinine on the back end. The long, incisive finish shows very good energy and an appealing seamless character. Nicely balanced Champagne that would work well with either rich or delicate foods.

Now owned by Bollinger, Ayala’s Champagnes have seen great improvement in recent years. This nonvintage Brut is complex, with its dry character given weight by a hind of toast, almonds and a taut aftertaste.

Bright yellow-gold. Pungent aromas of baked apple, pear skin, toasted nuts and brown spices. Rich and fleshy, offering palate-coating orchard fruit flavors and notes of allspice, herbs and toasty lees. Nicely blends sweetness and spiciness but finishes a bit abruptly, with an echo of dusty minerals.

The NV Brut Majeur shows lovely balance in an approachable, up-front style well-suited to near-term drinking. Clean, mineral notes add a sense of proportion on the fresh, vibrant finish. The blend is 45% Pinot Noir, 35% Chardonnay and 20% Pinot Meunier, 80% of which is from the 2004 vintage, while the rest of the wine is composed of Pinot Noir and Chardonnay reserve wines. Bright citrus notes dominate initially, but give way to smooth toasty elements and ripe stone fruit flavors. Medium-bodied with tiny bubbles, the Ayala is a great value in true French Champagne. Not just for toasts, you can also drink this with party foods (pretzels, cheese platters, popcorn), grilled fish, or creamy pasta dishes.
