Amber, with a copper cast. Moderately full-bodied. Marmalade, honey, maple. Rounded and quite fragrant on the palate. Ample fruit is brought forth with rich woody components and deep spice. Long, smooth, sweet and delicious finish.

Delicious but fiery, this nine-year-old small-batch Bourbon offers deep toffee aromatics and bold flavor. On the palate, look for relatively dry flavors: leather, cedar, dried orange peel. A splash of water softens the profile to bring out more vanilla, honey, even a touch of chocolate.

Almost stereotypical of what a chunky and very good bourbon should be: firm yet yielding with excellent honeycomb and cocoa amid vanilla and honey. At times almost old Jamaican pot still rum-like; sweet delivery — rummy again! — then a delivery of oily corn and spices and wonderful layering of vanilla-fed oak. Long and powerful and fabulously lush with a return to honeycomb topped by a sugared rye-spice climax. No whisky in the world has a more macho name, and this is not for the faint-hearted.

Pretty medium amber/russet color. Opening inhalation detects voluptuous, deep aromas of toasted walnut, cereal grain, and dark toffee; aeration serves to stiumulate even deeper scents that include honey, hard candy and overripe peaches. There’s a burst of palate entry heat; midpalate features mature flavors of kiwi, key lime, raisins, plums and grapefruit. Aftertaste is rich, textured and sweet. One of my favorite muscle-bound tipples.

Smells of sweet corn, buttered popcorn and pistachio nuts in the early stages; later whiffs pick up well-endowed scents of sautéed butter, oaky vanilla, beeswax and linseed oil. Palate entry is full-bodied, sweet and honeyed; at midpalate the taste profile turns drier, more intensely grainy-mashy and breakfast cereal-like. Finishes with notes of nougat, almonds, candy bar, and oak.

Knob was one of the first bourbons I had when I started taking whiskey seriously, and it’s still a kicker. No-nonsense, flint-hard nose: slickly-polished oak furniture, cinnamon stick, cracked rye, wet cornmeal, hard candies. Bang! A lean whiskey that gets in your mouth and explodes with rye spice and cinnamon candy, a sharp wedge that opens you right up. The finish echoes: oak, a dying fire, clean and almost crisp. Emphatic, bright, and swift.
