The 2019 Cabernet Sauvignon is a blend of 75% Cabernet Sauvignon, 13% Merlot, 11% Malbec, and the rest Cabernet Franc that’s from a mix of sites outside of Walla Walla. Aged 22 months in 57% new French oak, its deep purple hue is followed by a great nose of ripe cassis, graphite, spring flowers, and spicy oak. Rich, medium to full-bodied, and beautifully balanced with ripe tannins, this is a terrific Cabernet readers will love. It will benefit from just a few years in the cellar and keep for 15–20 years. Dark magenta in the glass, the 2019 Cabernet Sauvignon is broad and generously layered with a dense core of dark red and black fruit essences. Full-bodied, the wine is juicy yet firm with fine-grained tannins that grip the gumline before lingering long over the spicy, focused finish. It’s a broad-shouldered wine that will drink better with additional time in the bottle. The wine rested for 18 months in barrel, 50% new French oak, and will please Napa Cabernet drinkers. While ripe in style and fruit-centric, this boasts a core of stimulating acidity and minerals that balances out the style beautifully, as exotic inner florals cascade throughout. The 2019 leaves a web of sweet tannins to linger while finishing remarkably fresh, as echoes of violet pastille and spiced citrus fade. This is a wonderfully balanced blend of 75% Cabernet Sauvignon, 13% Merlot, 11% Malbec and 1% Cabernet Franc, where each variety really adds to the final result. Well done. (Eric Guido)

The 2019 Cabernet Sauvignon The Classic is mostly Cabernet Sauvignon but includes 12.5% each Cabernet Franc and Petit Verdot, all from the In The Rock Vineyard. It spent 22 months in 50% new oak. Ripe plums, currants, wild strawberry, sweet tobacco, dried flowers, and hints of iron all emerge from this gorgeous wine that’s medium to full-bodied, has a ripe, seamless mouthfeel, beautiful tannins, and a great finish. The texture and balance are spot on, and while it’s already incredibly complex, it should easily evolve for 15–20 years if well stored. (Jeb Dunnuck)

The 2019 Cabernet Sauvignon Walla Walla Valley is 100% Cabernet Sauvignon from a mix of seven different vineyards and it’s always a good value. Its deep purple color is followed by a ripe, opulent, full-bodied Cabernet with lots of plum and darker berry fruits, notes of chocolate, roasted herbs, and oak, ripe yet mouthcoating tannins, and a great finish. While it doesn’t have the elegance of the top cuvées, it brings ample fruit and texture, and should keep for 10–12 years. (Jeb Dunnuck)

A blend of 78% Cabernet Sauvignon and 11% each of Merlot and Syrah that spent 20 months in 55% new barrels, the 2018 Cabernet Sauvignon offers lots of spiced red and black fruits as well as notes of iron, toasted spice, and sandalwood. Nicely textured and medium-bodied, with both fruit and richness as well as a good sense of elegance, it’s ideal for drinking any time over the coming 10–15 years. As Cabernet Sauvignon goes, you’d pay three times the price for the quality if it was from Napa. (Jeb Dunnuck)

Full dark ruby. Inky, brooding aromas of blackberry, boysenberry, licorice, menthol, black pepper and tree bark; shows more of a green edge than Drew Bledsoe’s Doubleback wines. Very concentrated, dark and deep, with inky yet surprisingly suave flavors of black fruits, spices, licorice and bitter chocolate. Not a particularly herbal style of Cabernet, ultimately. Finishes with serious dusty tannins and lingering notes of bitter chocolate and black pepper. A bit folded in on itself and tannic in the early going, showing limited sweetness today, but built to age. And very Cabernet Sauvignon! Incidentally, this wine was previously called Flying B Cabernet Sauvignon.
