This wine’s caramel flavors become more saline as the wine opens in the glass. It’s soft in texture and voluptuous in aromas, a seductive blend of sweet, concentrated liqueur-like fruit and salt.
The dry, medium amber-hued non-vintage Dry Amontillado Los Arcos offers good body as well as a heady personality.
Walnut, halva, singed almond and green tea notes give this an intriguing profile, flirting with an off-dry character. Stays dry through the bitter orange-edged finish. Drink now. 4,500 cases made.

Attractive caramel, apricot and peach aromas drive straight to a pure, creamy palate of cinnamon apple, mocha, coffee and chocolate. It’s quite smooth and balanced, and very long on the finish. Avoids all the pitfalls of sweet Sherry by maintaining its balance and mouthfeel.
This is rich, but its lively acidity gives the caramel and nut flavors grace and precision. Serve it chilled, with — or in place of — a nut tart.
