Initially reductive notes of scorched earth and smoke in this wine dissipate with aeration, revealing pristine yellow apple and Mirabelle. Edged by a crush of oyster shells and salty mineral tones, this invigorating sip finishes on a whisper of white pepper. The wine is just starting to open now but should drink well through 2030. The 2020 Chablis Vau de Vey 1er Cru has an attractive bouquet with wild peach, light quince and flinty aromas, quite complex though I would not describe it as “intense”. The palate is very well balanced with a fine bead of acidity, harmonious, quite sappy towards the finish with decent length. Perhaps like the Butteaux, I would have liked a little more tension on the finish, but it should still give 8–10 years’ drinking pleasure. Tasted blind at the BIVB tasting in Chablis. (Neal Martin)
