Even with an appreciable volume (11,300 cases), all of the 2021 Chardonnay Mannequin was barrel fermented and matured, spending eight months in 23% new French oak. Blended primarily from Santa Barbara and Sonoma sources (there is some Napa fruit, as well as 2.6% Viognier), it’s toasty on the nose, boasting notes of roasted cashew, grilled peaches and vanilla. It’s full-bodied, lush and easy to drink, with tropical fruit and pineapple on the finish. Enjoy it on the young side. (Joe Czerwinski)

Pouring a bright medium yellow/straw hue, the 2021 Chardonnay Chloe is highly expressive, with a golden perfume of pineapple, orange oil, and a bit of honeysuckle. It has full body and a rounded texture, with ripe apricot, hazelnut, and white flowers. A lusher personality to drink over the next ten years, it’s a bit more open at this youthful stage. The 2021 Chardonnay Chloe is scented of white peach, jasmine, meringue and toasted almonds with flinty streaks. The light-bodied palate has a gently grippy texture and refreshing acidity to balance its concentrated core of spicy stone fruit, and it has a long finish full of ripe fruit. (Erin Brooks)

Traditionally, Palermo included wine that didn’t make it into Mercury Head or Papillon, but winemaker Dave Phinney now buys some fruit specifically targeted for this bottling. The 2021 Cabernet Sauvignon Palermo—a blend of estate-grown and purchased fruit aged 11 months in 34% new oak—includes small proportions of Merlot and Malbec. Offering up cherries, cassis and slightly earthy scents, plus hints of cinnamon and nutmeg on the nose, it’s full-bodied and nicely balanced, with its firmness matched by softness. Still not bottled at the time I tasted it, the 2021 Papillon Red Wine is a five-variety Bordeaux blend (Cabernet Sauvignon, Malbec, Merlot, Cabernet Franc, Petit Verdot) that spends 13 months in 44% new oak. While not that complex, it does offer up bold cherry and cassis aromas on the nose, while the palate is full-bodied and velvety, with a long, almost zesty finish. (Joe Czerwinski)

Winemaker Dave Phinney expects to bottle a bit more than 6,000 cases of the 2021 Cabernet Sauvignon Mercury Head, what he calls a “typical volume” for it. Sourced from a couple of well-known valley floor sites and the Stagecoach Vineyard (sometimes a bit of Monte Rosso Vineyard fruit makes it in the blend as well) and aged 13 months in 58% new oak, the nose offers up hints of menthol and cedar over a base of ripe cassis and cherries. It’s full-bodied and velvety in the mouth, while a hint of dark chocolate creeps in on the lengthy finish. (Joe Czerwinski)
